The chunks can be placed directly on the charcoal in case of a charcoal barbecue or a smoker. If you have a gas barbecue, fill the Napoleon Cast Iron Charcoal and Smoker Tray (Ref. 67732) with the desired type of wood chunks, that have been soaked for 30-60 minutes before. Then place the Cast Iron Charcoal and Smoker Tray directly over a burner. To do this, remove the grill's cooking grate and sear plates and turn on the gas barbecue.
